Food Allergy Spring Cookie!

My kids and I made this cute pizza cookie over the weekend. Here’s how:

Ingredients:

One box of Cherrybrook Kitchens Cookie mix (We used gluten free)
Safe Frosting
Necco wafer or other “safe” pastel candies
Safe Jelly Beans
Safe coloring and sprinkles

Place a piece of parchment paper on a cookie sheet or large cookie pan

Prepare cookie mix and press onto the parchment paper into a large pizza shape
Bake 5 to 10 minutes longer than directed until the edges are golden brown.
Remove cookie from pan and cool completely.
Frost cookie with tinted frosting leaving about 1/2 inch from the outer edge.
Swirl white frosting to resemble pizza cheese.
Top with safe candy of your choice to resemble pepperoni and other condiments.

Cut into diagonal slices to serve. Enjoy!

Good morning. I am not sure that Necco wafers are safe. This same company processes its own peanuts on site. I would change the recipe to “safe” pastel candies. I took the following from their web site:

    New England Confectionery Company’s Candies
Do Not Include Processed Peanut Butter from the PCA Or Any Outside Source

REVERE, MA, January 19 – In recent days, the Food and Drug Administration has asked consumers to avoid foods that contain peanut products from the Peanut Corporation of American (PCA). The New England Confectionery Company, Inc., in response to the recent recalls of such peanut butter containing products, would like to assure our consumers that we do not purchase any processed peanut products from the PCA or any outside source. In fact, all peanuts used in our candies are roasted at our Revere, Massachusetts facility, where they are converted into our own peanut butter. Having complete control over the process allows the New England Confectionery Co. to exercise strict quality measures to ensure that the products we produce are safe. Our list of peanut-containing candies includes: Clark Bars, Mary Janes, Squirrel Nuts, Double Dipped Peanuts, Bridge Mix, Skybar, Peanut Clusters and Assorted Boxed Chocolate under the Haviland and Masterpieces brands.
